What to do when one is at a cozy, winter, family gathering in the U.S. and can't get their hands on wheel of Roblechon to re-create a mouth watering Tartiflette? After taste-testing differing options and talking at length with the local cheese-monger (who had no idea what we were talking about), it was discovered that one can use an Italian cheese known as Taleggio as an acceptable replacement. Follow the traditional recipe, and while not as creamy, it does produce a dish with much of the same deep flavor.
